The other day, as I was going in for some Elevens at Te Aro Roasted, I thought I saw Shawn and Andy talking outside of the shop. That made me think two things:
1) When was the last time I was up the hill towards Riverdale?
2) Remember the time when we zoomed down the hill in those little cars during a huge snowstorm, only to end up flipping and tumbling so hard and fast that it was quite scary.
Wait -- we're talking about Rooster.
Tooo long, as such I decided to check out their website.

Coffee was emerging in the 1950s and 1960s, but I guess it wasn't all that good.
Guess we've come a long way from that point after over 60 years of coffee making, or have we?

The low tech method of brewing coffee is getting a huge surge within the coffee circles of Toronto.
Personally I've been experimenting with Hario V60s, and Chemex. There will not be a deviation from espresso, just another method of brewing to be explored.
Mercury, Crafted, LIT are just some of the cafes to offer V60/ Chemex or some variation of the kind.
In the meantime, I happened to have stumbled upon this lovely video created in Japan.
